Roasted Butternut Squash with Balsamic

A pretty holiday side you can make from scratch or with a few store-bought shortcuts — roasted squash, a balsamic glaze, and jewels of pomegranate.

Ingredients

  • 1 butternut squash, peeled and cubed
  • ½ red onion, cut into thin wedges
  • Avocado oil
  • Sea salt, garlic powder, onion powder, smoked paprika, and black pepper
  • Fresh thyme leaves
  • ½ cup balsamic vinegar
  • 1 tbsp raw honey
  • Pomegranate seeds

Method

  1. Heat oven to 400°F. Toss the squash and onion with avocado oil and the seasonings, spread in a single layer on a baking sheet, and scatter with thyme. Bake 30–40 minutes.
  2. Meanwhile, reduce the balsamic with the honey over medium-low until it coats the back of a spoon, or use a store-bought glaze.
  3. Serve the squash drizzled with the glaze and finished with pomegranate seeds and sea salt. Buen provecho.
