Homemade albóndigas — a mix of my mom’s and my Tía’s recipes. I hope you love it as much as I did as a little girl.
Ingredients
Broth
- ½ large onion, diced
- 1 tomato, chopped
- 1 tbsp butter
- Salt
- 2 quarts chicken broth
Meatballs
- 1½ lbs grass-fed beef
- ½ onion, thinly sliced
- 2–3 garlic cloves, minced
- 2 eggs
- Chopped cilantro and mint
- Salt and pepper
- ⅓ cup uncooked rice
To finish
- 3 potatoes, chopped
- 3 carrots, chopped
- 4 oz tomato sauce or purée
- Zucchini, chopped
Method
- Sauté the diced onion and tomato in butter with a little salt, about 5 minutes. Add the chicken broth and bring to a boil.
- Combine the meatball ingredients, form into balls, and drop into the broth.
- While the meatballs cook, add the potatoes, carrots, tomato sauce, and zucchini. Season to taste and serve with cilantro, lime, and salsa. Buen provecho.
